Bean Free Beef Chili

Chili is such a warm and satisfying meal to enjoy.

But if you’re trying to avoid beans, it can be hard to find a bean-free chili. While beans are high in fiber, they are also high in lectins which can compromise gut health.

This recipe offers the perks of an easy-cook chili without compromising your gut health!

Description:

This is a great recipe to batch cook for a week of lunches or enjoy with the family for an easy dinner. It freezes well so you can enjoy it now or save it for later.

Ingredients

  • 2 tsp ghee or coconut oil
  • 2 lbs ground organic beef
  • 2 bell peppers
  • 2 (8 oz) cans tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1 onion (chopped)
  • 2 large carrot (chopped)
  • 2 stalks celery (diced)
  • 4 cloves of garlic (chopped)
  • 1 tsp cumin
  • 1 ½ Tbs chili powder
  • 1 ½ tsp dried oregano
  • Salt + pepper (to taste)

Instructions

  1. Chop all vegetables and set aside.
  2. Turn on the InstaPot and set to sauté. Add ghee and beef and cook until browned, breaking the beef into smaller pieces as you stir.
  3. Add chopped vegetables and cook for 3-5 minutes, until softened.
  4. Add garlic, tomato sauce and diced tomatoes and spices.
  5. Turn the InstaPot to the chili setting / cook for 20 minutes.
  6. Once cooked, release the pressure value and serve. Enjoy!
